500 gr. Exquisite fine fine cracked wheat,
1 large onion,
1-2 tomatoes,
4-5 cloves garlic,
2 green peppers,
2 fresh red peppers,
1 tablespoon red pepper paste,
1 tablespoon tomato paste,
Half a teaspoon of black pepper,
Half a teaspoon of allspice,
Half a teaspoon of cinnamon,
Half a tablespoon of sweet tozbib is,
1 tablespoon clarified butter or margarine,
Half cup olive oil,
Less water and salt.


Put a large coarse grain bulgur. Onion, garlic, green and fresh red peppers are chopped. The cube is chopped. Some are thrown on the meatballs. Add the other material (excluding oil). While the meatballs are kneaded, tomatoes are added as the water is drawn. When it looks like it is going to soften, oils are added.( If the salt and softness are found to be low at the end, water is added and the mixture is thickened). It is shaped like a raw meatball by squeezing it in palm. Lettuce-parsley, tere-radish etc. Is served with adornment.
