Nefis Agro Spiced Chickpea Bulgur Pilaf

Servings: 4 | Prep Time: 15 minutes | Cook Time: 30 minutes

Ingredients

  • 1 cup Nefis Agro Pilaf Bulgur
  • 2 cups hot water or vegetable stock
  • 1 cup cooked Nefis Agro Chickpeas
  • 1 large dry onion (diced)
  • 3 tbsp olive oil
  • 1 tbsp tomato paste
  • Spices: 1 tsp cumin, 1 tsp chili flakes (pul biber), half a tsp black pepper, salt.
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or pilaf pot. Sauté the diced onions for about 5-7 minutes until softened.
  2. Add the tomato paste and sauté for 1-2 more minutes until fragrant.
  3. Add Nefis Agro Pilaf Bulgur to the pot and stir-fry for 2-3 minutes.
  4. Add the cooked Nefis Agro Chickpeas and all the spices (cumin, chili flakes, black pepper, salt) to the pot and mix.
  5. Pour in the hot water or vegetable stock. Once it starts to boil, reduce the heat, cover the pot, and cook for about 15-20 minutes until the bulgur has completely absorbed the water.
  6. Once the pilaf is cooked, remove it from the heat and let it rest, covered, for about 10 minutes.
  7. Gently fluff the pilaf and serve hot, garnished with finely chopped fresh parsley.
