Green Lentil Stew is one of the most beloved hearty dishes in Turkish cuisine. Nefis Agro: Nutritious Green Lentil Stew

Servings: 4 | Prep Time: 15 minutes | Cook Time: 45 minutes

Ingredients

  • 1 cup Nefis Agro Green Lentils
  • 6 cups hot water
  • 1 large dry onion (finely diced)
  • 1 tbsp tomato paste
  • 1 large potato (diced)
  • 1 carrot (diced)
  • 3 tbsp olive oil
  • Spices: Salt, black pepper, chili flakes (pul biber) (optional).
  • Half a bunch of fresh parsley (finely chopped, for garnish)

Instructions

  1. Rinse Nefis Agro Green Lentils and boil them in a pot with enough water to cover for about 15 minutes. Drain the first water and rinse again. This step helps keep the dish's color clear.
  2. In a separate pot, heat the olive oil. Sauté the diced dry onions until softened.
  3. Add the tomato paste and sauté for 1-2 more minutes until fragrant.
  4. Add the parboiled green lentils, diced potato, and carrot to the pot. Stir.
  5. Add 6 cups of hot water and spices (salt, black pepper, chili flakes). Bring to a boil over high heat.
  6. Once boiling, reduce the heat, cover the pot, and cook for about 30 minutes until the potatoes and carrots are tender.
  7. After the dish is cooked, remove it from the heat, let it rest for 5 minutes, and serve hot, garnished with finely chopped parsley. It can be served with pickles or yogurt.
